Chicken Burrito Bowl Recipe

A wholesome, build-your-own style bowl inspired by the bold flavors of Chipotle Mexican Grill — perfect for meal prep, café menus, or a healthy dinner option.

1. Chipotle Chicken Marinade

Ingredients (Serves 2–3 bowls):

  • 300–400 g boneless chicken thighs (juicier than breast)
  • 1 tbsp olive oil
  • 1 tbsp lime juice
  • 4 tbsp of Picante Smoky Chipotle and Roasted Garlic Seasoning
  • ½ tsp Picante Oregano leaves

Method:

  1. Mix all marinade ingredients.
  2. Coat chicken well and marinate for 30 minutes (minimum).
  3. Grill or pan-sear on high heat until slightly charred (about 4–5 mins per side).
  4. Rest 5 minutes, then slice.

🍚 2. Cilantro Lime Rice

  • 1 cup cooked basmati or long-grain rice
  • 1 tbsp lime juice
  • 1 tbsp chopped fresh coriander (cilantro)
  • Salt to taste

Mix while rice is warm.

🫘 3. Seasoned Beans (Optional but Recommended)

  • ½ cup boiled black beans or rajma
  • ½ tsp cumin powder
  • ½ tsp Picante Garlic powder
  • Salt
  • Splash of water

Simmer for 3–4 minutes.

🌽 4. Fresh Corn Salsa

  • ½ cup boiled sweet corn
  • 2 tbsp chopped onion
  • 1 tbsp chopped coriander
  • 1 tbsp lime juice
  • Salt & Picante Red Chilli flakes

Mix fresh.

🥑 5. Guacamole

  • 1 ripe avocado
  • 1 tbsp lime juice
  • Salt
  • 1 tbsp finely chopped onion
  • Optional: green chilli

Mash lightly (don't over-puree).

🥗 Bowl Assembly — Layer in this order:

  1. Cilantro lime rice
  2. Sliced chipotle chicken
  3. Seasoned beans
  4. Corn salsa
  5. Lettuce
  6. Guacamole
  7. Sour cream or hung curd
  8. Extra sprinkle of Picante Smoked paprika or Red Chilli flakes
